When I discovered the Instant Pot, I rediscovered my mother, Bernice’s legacy — her recipes. Stored in a bulging brown folder, held together with a giant rubber band, I came upon her collection — decades of recipes from another time. Some quite unusual, lots of easy, healthy, and not-so-healthy recipes, gathered over a lifetime. Everything from soup to nuts — literally. I poured over hundreds of handwritten notes and suggestions in scribbled in the margins I knew were meant for me when she was no longer here to demonstrate.
Passive-aggressive tips like: “Season both sides, unless you plan on only eating one side of your food, but what do I know?”
My mother, Bernice was known for her wicked sense of humor, she was a hoot — brace yourself. And of course, she was an amazing cook. And so, I’ve taken her recipes — favorites from my childhood, and also recreated many that can be made in the Instant Pot. Everyone is invited to our table. Enjoy. Or as Bernice would say, “Come, sit. Here, eat this! You’ll Die!”
